The project evaluated washing of salmon in ozone treated water and storing in ice from ozone treated water, regarding prolonged shelf life and product quality. Salmon, slaughtered at Nordlaks Ltd., was separated in four groups; 1. Salmon flushed/ washed in ozone treated water and stored in boxes covered with ice from ozone water. 2. Salmon flushed/ washed in regular water and stored in boxes covered with regular ice. 3. Salmon flushed/washed in ozone treated water and stored in boxes covered with regular ice. 4. Salmon flushed/ washed in regular water and stored in boxes covered with ice from ozone treated water. No significant differences were found among the four groups, regarding the following analyses; · Total viably count and sulfiedproducing bacteria · Liseria monocytogenes and sulphide producing bacteria · TBARS · Fillet colour · QIM
