The aim is to study the functional effects of isolated fish proteins and of a protein suspension prepared from minced muscle after injection into fish fillets. The first step will be to evaluate the distribution of injected proteins in the muscle and how the type of needles may affect it. The next steps involve evaluation of different types of protein products separately. Finally, comparison of the most promising products will be carried out, with regard to functional properties of the added proteins in fish muscle. The results will be used in other projects where isolation and processing of functional fish proteins is developed.
