The aim is to utilise proteins from waste water, with regard to maximizing profits and maintaining functional properties of the proteins. The yield of ground fish catch will be increased by recovering proteins in waste water from filleting and skinning machines. The proteins will be used for human consumption and therefore it is important to evaluate both microbial and functional properties of the fish mass recovered.
