Summary The overall aim of the project is developing processes for the purification of muscular proteins from fishes of the family Gadidae such as cod, haddock, pollock and blue whiting as well as gather market information for potential markets. The resulting business plan will be presented for potential investors. In the first year methods were developed to produce well defined muscular protein fractions. A study on markets for dried proteins in food formulations, sport nutrition and functional food was carried out in the USA market. Further studies are currently in preparation to analyse the market potential for marinated seafood products. A detailed study on the status of patents and property rights was performed by A&P Arnason Intellectual Property Group to ensure that no valid patens are violated in the design of the process. A new company, Iceprotein was founded to take over the development of the business plan. The continuing work includes validation of a production process for the separation and purification of the muscular proteins with accompanying description of equipment, analysis if chemical and microbiological parameters in the raw material. This includes analysis on most critical parameters i.e. the reduction of phospholipids degradation. Ultrafiltration techniques will be developed to fractionate non-settable proteins. Collaboration with potential end users will be established on the mapping of the market for seafood marinates, sport nutrition and functional foods.
