Goals: 1. Productive recovery of the native oyster Ostrea edulis 2. Innovation concerning the complete production cycle (hatchery, pre-fattening and fattening) of the flat oyster in the existing hatchery 3. Offshore farming of the flat oyster in the open sea is in itself an innovative element as this strategy has never been tested in Italy 4. Importance will be given to the traceability and final quality of the product, both from a genetic, nutritional and micro-biotoxicological point of view 5. Equal importance will be given to the environmental and economic sustainability of the entire production process, adopting systems with reduced energy consumption and the publicity of the results obtained.
