The project evaluated electrical and automatic mechanical stunning of salmonids during commercial industrial slaughter at four premises. The electrical stunner was a semi-dry system from Stansas, Seaside, og the mechanical used a non-penetrating captive bolt in a swim in system from Seafood Innovation (SI-5). Stunning quality was evaluated by observation of fish in a water tank after stunning, with and without bleeding, using signs of respiration, eye roll and other reflexes indicating consciousness. Time to onset of pre rigor was measured, as well as cases of blood spots in the filet or fractures of the spine. Prerequisites for correct use of the stunners were given, e.g. fish flow, Voltage, fish size and condition, and maintenance of equipment. Critical control points regarding supervision of efficient stunning in the two systems, as well as fish welfare during crowding, pumping, and live chilling, were suggested. The report provides data valuable to the slaughter industry, making an informed choice between the two stunning systems possible.
