A Japanese company has developed a freezing technology, Cell Alive System (CAS), which claims to delay the formation of ice crystals in the product using electromagnetic force fields. Last year, some Norwegian fish producers participated in a demonstration of the method at the manufacturer in Japan, and products produced with the method were demonstrated and shown. However, there is a lack of a scientific explanation for how it works. MMC Kulde has purchased a test freezer that they want to use for testing. SINTEF Fisheries and Aquaculture, in collaboration with Møreforskning, MMC Kulde and Hofseth International, has sent an input to the project to carry out an experiment that can shed light on the operation and effect on the quality of salmon fillets frozen with CAS. Goal: obtaining scientific documentation on whether magnetic field freezing (CAS) has a positive effect on drip loss, freezing time and eating quality on farmed salmon fillets. Sub-goals Measure energy consumption and characterize test freezers and acquire knowledge as a basis for upscaling to industrial freezing.
