Summary For the supply of fish as food of high quality, the process of harvesting is of fundamental importance. A respectful handling of fish during stunning and killing procedures is also required by legal regulations and is expected by the consumers. That animal welfare is safeguarded in the everyday praxis of aquaculture is intended by the present project, which aims to assure that up to date procedures for stunning and killing of rainbow trout and carp will be adapted to the needs of the highly diverse aquaculture farms in Germany and then established in example farms. A board of advisors with members experienced in fish farming, stunning of fish, or animal welfare will be appointed to support the project. The aim of the project is to provide support to fish farmers during the praxis of slaughtering their fish. Furthermore, other occupational groups, such as veterinarians, professional bodies, or administrative officers will be approached helping them to reduce their lack of knowledge and satisfy their need for information on humane procedures for stunning and killing of fish. In 14 aquaculture farms with a large diversity of different farming strategies, the status of knowledge on the procedures for stunning and killing of fish will be recorded, and evaluated with regard to possible improvements. Based on the results, amended procedures will be developed and well adapted for farms with different marketing strategies. This should enable the personnel involved in the slaughtering process to improve the procedures and to analyse and ensure the effectiveness of the stunning method used. Recommendations will be developed and provided as training material for fish farmers and for other professionals in charge with stunning and killing of fish. By the organisation of training courses on example farms and of further advanced training courses the improved skill will be disseminated.
