Main objective: To investigate whether hyperspectral imaging/spectroscopic measurement can be developed as a method for predicting texture in salmon fillets. Sub-goals: • To investigate the relationship between hyperspectral imaging of salmon fillets and measured texture in the same raw material. • To investigate whether hyperspectral imaging of salmon fillets can be used to predict texture development during storage. • To investigate whether a point measurement can be sufficient to predict texture in the storage process based on the hyperspectral images. This is to be able to assess alternatives in the development of method/instrumentation; say, for example, whether it will be possible to develop a hand-held measuring instrument.
