The need to maintain high levels of quality and food safety, along with the growing consumer sensitivity, are circumstances that demand a thorough control of the safety (unperceived quality) of fishery resources destined for consumption, not only based on analytical protocols applied to the final product but also on programs that guarantee food quality and safety at the source. In response to this need, the EPISTOCK project proposes the implementation of a pilot study for the development and evaluation of a differential protocol for parasitosis, identification of critical control points, and risk analysis, in target species, stocks, and fishing grounds of greatest interest to the Galician offshore fleet. The validation of this program at the source will lay the groundwork for a future Parasitosis Technological Service for extractive fishing.
