An important category of products from the Norwegian fishing industry are various fillet products of whitefish. Based on what seems to be happening in some European markets, there is a need to categorize the products in more detail and then only those products that are based on fresh raw materials are included. Thawed round fish that is filleted and frozen is thus kept out. From the Norwegian side, there is therefore a strong need to look at how the various consumer markets for fillets are developing, and here it is particularly important to obtain information on the prevalence of thawed fillets. If important players in European markets envisage that more of what is currently sold in fresh condition will be replaced with frozen / thawed, this is an important signal to the Norwegian fillet industry. To examine industrial buyers' preferences for different types of whitefish fillets in the British and French markets. With such knowledge, one can analyze why the export of frozen fillets of cod and haddock increases at the expense of fresh fillets in the British market, as well as assess whether the industry can experience the same changes in the French market.
