Storage temperature and residual shelf life is a recurring theme in the world of research, professional literature, etc. Norwegian media has also regularly drawn attention to the quality of fish counters and the Norwegian Food Safety Authority conducts regular inspections of hygiene standards, including temperature conditions. The project aims to improve storage conditions in fish counters by lowering the air and fish temperature. This will mainly be achieved through improvements of a technological nature, but correct use and efficient operation will also play a role. Increased drying of the surface of fish products must be avoided. Sub-goal 1 : To obtain an overview of current fish counters on the Nordic market and extract what mainly distinguishes good counters from bad ones. Select two types of disks for further analysis. Sub-goal 2 : To make computer models and carry out experimental measurements of refrigeration data in two to three fish counters during operation, as well as calculate the residual shelf life for fillets of cod and salmon. Sub-goal 3: To prepare concrete proposals (2-3) for technical improvements and recommendations for a regular fish counter in Norwegian shops on the basis of results obtained under sub-goal 2. Sub-goal 4 : To describe storage and refrigeration conditions in fish counters in such a way that it promotes insight and transfer of experience from ""pattern shops"" to other member companies in NSL. In addition, concrete proposals must be formulated for further R&D work.
