The SUPREME (Sustainable production of ingredients from whitefish rest raw materials) project aims to find technological solutions for preventing food loss in the whitefish value chain and to improve the utilisation of fish resources. Rest raw materials from whitefish contains valuable proteins and lipids (e.g. omega-3) which should be upgraded to food-products for a growing population.
