"The objective of the project is to achieve a profitable utilization of all the cut parts from king crab, as well as the by-products thereof. This applies to the commercial fishing that takes place today, and the fishing that takes place west of the Nordkapp, where the crab is retained, depending on size and quality. The strategy in the project is based on the establishment of a collaboration between the producers of king crab and the R&D environment with a view to a more long-term investment where we carry out a combination of short-term user-led projects where the goal is better utilization of raw materials and profitability, combined with a long-term R&D effort through mapping bioactive ingredients from king crab. Furthermore, that we obtain information from other environments (snow crab in Alaska) with the aim of being able to use the knowledge that exists in these environments more quickly. The project is planned to be carried out in three phases: 1. A data acquisition from production environments in Alaska, possibly the East coast of the USA (Maine) for processing Snow crab (quality, cutting, recovery of meat, canning etc.) 2. A workshop (VMA, R&D, manufacturers) with a review of the most important opportunities, combined with prioritization of business-oriented measures. 3. Organization and concretization of the main project, short-term and long-term measures. (Action plan)"
