The aim is to increase the value of blue whiting and cut offs from demersal catch by producing and marketing proteins as ingredients in ready-made food, sport&health products as well as functional foods and to find the market position for fish proteins in this new field. The aim will be achieved by collecting data and information, develop production techniques, measurements of bioactivity as well as other properties and by market research and promotion. The market for proteins as ingredients in ready-made food, health products and functional foods will be analysed. Production methods for extraction of muscular proteins from blue whiting as well as muscular tissue from backbones and cut-offs and inject processed proteins into fillets will be designed A process for production of water soluble and mild protein powders for sport nutrition and for special markets from the isolated muscle proteins will also be designed. Selected products will be analysed for in vitro bioactive properties as well as composition and functional properties. Finally process description report and a feasibility report on production of selected products produced from of cuts and h&g blue whiting will be made.
