The FLAVOREDUC project looks at different methods to prevent and eliminate ground flavor in fish reared in recirculating aquaculture systems (RAS). This ground flavor is caused by a large group of bacteria that are ubiquitous in the soil, but also in fish ponds and RAS systems. For unknown reasons, they produce two volatile compounds, geosmin and 2-methylisoborneol (2-MIB), which give the culture products the typical ground flavor. It is a global problem for which the aquaculture sector has been looking for a solution for years.
