The goal of this project is to perform a comprehensive investigation/screening of the bioactivity of flavours produced from Icelandic seafoods. We will investigate their potential to lower oxidation, blood pressure, cholesterol, inflammation and cancer. The ultimate goal is to strengthen the current market and develop new markets for Icelandic natural seafood flavours from the findings of this project. Another goal is to produce a seafood flavour from blue whiting.
