"After contacting the inventor of a new principle for filleting whitefish, funding was sought for an evaluation using researchers from SINTEF Technology and Society. One of the main goals for the fillet industry has been to develop a rational method for bone removal from fillets. Significant resources were invested in developing a bone remover in collaboration with Marel, but this was not successful. In this project, the aim is to test an entirely new principle for filleting whitefish, where bones are not cut out, but fillet pieces are cut, leaving thick fish bones on the belly. The steering group in the Fillet Forum considered this to be a very interesting solution, leading to the evaluation of this principle. Main Objective: Based on interviews with inventor Braeger and a demonstration of the functioning principles of the machine for splitting and filleting, the following sub-goals will be covered: Sub-goal 1: Evaluate whether the functioning principles of the machine are suitable for industrial use in the Norwegian fillet industry, with a focus on technical solutions. Sub-goal 2: Clarify the capacities and factors for raw material utilization that underlie the machine concept. Sub-goal 3: Evaluate factors related to the machines' impact on the processed raw material and clarify essential hygienic and safety aspects of the machine concept."
