The project results showed that lightly salting of saithe fillets is relatively uncomplicated and non time-consuming. To get a sufficient storage time of the thawed product, a high microbial quality of the brine injected is necessary. The yield increased with 13-14 % during the process making value added saithe products possible. To insure minimal weight losses during processing, skin-on fillets are recommended in favour of fillets without skin. Also to some extent, the skin protects the fillet against microbial contaminations and further gaping. The colour and appearance of the saithe products were similar as of the products of the Spanish market today.
