The objective of the project is to assess key factors influencing drying conditions. This data will be utilized to minimize peaks and troughs in drying temperatures. By reducing fluctuations around the mean temperature in the core of the fish, it is anticipated that the drying process will become more controlled, resulting in improved and more consistent quality and yield. it will be surveyed whether there are different practices when hanging fish on shelves; quantity and number of fish per m2 pile, orientation, ground conditions such as poured concrete vs natural ground, etc., and conditions that can affect draft and drying. The work will be carried out as a preliminary project during the 2008 season and the result will be reported at the next meeting of Dry Fish Forum in Svolvær on 9 May.
