Summary Development of technology, process and knowledge about filleting mackerel in Norway has had a high priority in Norwegian companies for a number of years, and several projects have been carried out in this area. It still remains to improve parts of the process, which can contribute to reduced production costs and/or increased quality of the finished product. The main objective is for Norwegian-produced mackerel fillets to become competitive with similar production in low-cost countries.
Main objective:
To develop automated processes for cooling fresh raw material, and raising the temperature of frozen blocks, to a specific temperature (e.g. -2.7 °C), with a capacity that is adapted to a pc. filleting machine for mackerel.
Sub-goals:
• To develop an adapted cooling of fresh raw material down to -2.7 °C throughout the fish.
• To achieve a temperature increase (thawing) of frozen blocks of mackerel to approximately -2.7 °C throughout the fish.
• To optimize cooling/thawing capacity in relation to filleting capacity.
• To combine the solutions for defrosting and cooling in one control system that controls and monitors the processes.
• To develop and adapt a technology that with a capacity of tank 1: thawing 20 kg block 4 tons per 100 minutes, tank 2: leveling and cooling 9 tons per 40 minutes. Cooling fresh mackerel to -2.7 ° C using 2 pcs. tanks and a capacity of 18 tonnes per 40 min.
