Summary The main objective of the project is to increase value creation, improved profitability, and competitiveness for Norwegian processed white fish, by developing more attractive products with a low environmental footprint. Despite the Norwegian health authorities’ goal of a 20% increase in fish consumption by 2021, consumption is declining. There are several reasons why many consumers do not eat fresh fish regularly, such as varying availability, poor experiences with the quality and that products are perceived as not convenient. In order to increase consumption, both the actual quality of white fish products must be more predictable, and it must be packaged in a sustainable way that is more attractive for consumers. White fish is a perishable product, and the supply of fish varies with season. It is therefore challenging to produce and deliver products with such high quality throughout the year. The product concept to be developed in the project will be based on sustainable packaging systems, quality improvement, increased shelf life and stable delivery throughout the year and aims to enable increased production of processed white fish products in Norway. The project is interdisciplinary and will be performed as a three-year project starting in January 2021.
