The project "Product and production development of the herring fillet" has been a three-year project that was completed in December 2005. The project has been a collaboration between the Fisheries and Aquaculture Industry National Association (FHL) at Pelagisk Forum, Fryseriet AS, Egersund Seafood, and the R&D companies; Norconserv and SINTEF Fisheries and aquaculture. Two types of products have been developed in the project: Matjes-type herring fillets and marinated herring fillets (Bismarck). A new production process has been developed where the herring fillets are frozen in the sheet. The project has led to the sale of new semi-finished herring fillet products for customers in Poland, improved product quality due to processing of fresh instead of thawed raw material and given increased earnings by Norwegian companies. In addition, it has provided a number customer benefits; simplified process steps, reduced waste and / or emissions and reduced packaging treatment. The experiments have shown that we can achieve a goal of increasing the processing of herring fillets in Norway. To be able to conclude in relation to the commercial opportunities and challenges, will further work and adjustments are required to reach a larger market. The purpose of the project has been to increase value creation in the Norwegian pelagic processing industry by: o Develop new products and production processes o Create closer customer relationships o Better utilization of existing processing capacity o Increase customer base
