In 2006, salt and clipfish products of cod and saithe were exported for almost NOK 3.7 billion. The statistics on Norwegian seafood exports show that clipfish of cod is only surpassed by fresh round salmon in terms of export value. Although the industry is very large both in value and volume, competition is fierce and margins are small, not least because salted and clipfish are important for the less affluent part of the population in many of the markets. Significant amounts of salt are used for the production of salt and clipfish. For every kilo of raw material, around 1 kilo of salt is used. Annual consumption for the industry will be around 180,000 tonnes of salt, corresponding to a value of approximately NOK 120 million. In connection with the EU Food Regulation, new regulations have been prepared and are out for consultation. It is proposed that the requirement to only use new salt in the production of salted fish be removed. However, companies themselves must document through their own control system that the foodstuffs are risk-free for folk food. In the salt and clipfish industry, there is a great deal of experience-based knowledge, but unfortunately little of this is documented through scientific work. In the last 10-15 years, however, significant research has been done on salting processes, quality and yields of Fisheries Research and Møre Research. As a result of the R&D activity, it has been seen that interest in research in traditional saltfish and clipfish companies has increased. The project is aimed at implementing production of salted fish and clipfish in an improved and more cost-effective way by recycling salt. The goal is to reduce consumption of new salt (purchased quantity) by up to 20%. Sub-goals are: 1) To describe the quality of used salt in various applications and map the possibility of recycling salt for reuse for salted fish and clipfish production; 2) to document the quality of salt and clipfish produced with recycled salt and describe a process for recycling and reuse of salt in saltfish and clipfish production.
