The project's overall idea is to use new packaging technology and analysis methods to achieve better utilization of raw materials by ensuring predictable and optimal product quality as well as extended shelf life for pre-rigor filleted salmon. The project's goal is to achieve better utilization of raw materials by ensuring consistent and predictable product quality and extended shelf life. This should be done by: 1)Identify and define «problem bacteria» 2)knowledge of bottlenecks production in relation to microbiological quality 3)Define optimal packaging methods adapted to product quality
