In order to increase value creation in the salmon industry, it is important to identify objective and measurable parameters that constitute the greatest quality challenges, where any quality errors occur and what measures should be implemented to prevent these quality errors from occurring in the future. There is no unambiguous definition of "quality salmon", and different product characteristics are emphasized differently, depending on location in the value chain, market and application. The target of the project is to contribute to improved fillet quality of Norwegian farmed salmon. The results from the project will contribute to improved fillet quality of Norwegian farmed salmon by reducing the extent of melan deposition as well as pale and shielded fillet color. These quality deviations have been pointed out by players in various parts of the value chain in the salmon industry as the most important to pay attention to in order to maintain the reputation of farmed salmon as a quality product and to ensure a future solid and predictable economy.
