The market situation for crab and crab products is such that some ingredients are difficult to sell at acceptable prices. This is e.g. meat from legs and cages, as well as roe and liver mass. The crab industry has in recent years developed fantastically in catching and receiving, while product development of finished products has been almost non-existent. There is therefore a need to start this type of project in order to be able to utilize raw materials that are currently pure residual raw materials and that have very limited sales opportunities at a relatively low price. The project ended up with concrete crab products such as crab tapas buns, which are currently in the grocery trade.
