The aim of the project was to find the reasons why cliff-fish from saithe develops yellow-brown and red discolouration during cold storage and to investigate specific processing conditions which might inhibit such a discolouration. A clear positive correlation was found between yellow-brown discoloration and non-enzymatic lipid oxidation in newly produced cliff-fish made from saithe. The fish got extremely discoloured when it was salted with a solar salt with an elevated calsium consentration. Secondly, the temperature was the most important processing condition regarding the weight yield, discoloration and lipid oxidation of the fish muscle.
