Farmed European whitefish (Coregonus lavaretus) is an important aquacultured species in Finland. Feed composition affects flesh fat content and composition and thereby determines quality and healthiness of the end product. Also suitability to various processes varies according to fat composition. Product quality, processability, healthiness and sensory characteristics as well as economical profitability was determined when vegetable oil usage was increased in whitefish feed. Furthermore, healthiness improvement of the flesh was investigated by so called finish feeding with fishoil rich diet. To support the profitability of European whitefish aquaculture and value chain simultaneously taking into account the needs and the wishes of consumers and the industry. To support the sustainable development of aquaculture by minimizing the use of fishoil. The goal of the project is to produce research data that supports the development of farmed whitefish as a high-quality, versatile and healthy raw material for the food industry. The whitefish raw material must meet the expectations set by the processor and the consumer and challenge cheaper white-fleshed imported fish with its properties. On the other hand, global changes in the availability of feed raw materials must not reduce the quality of fish products. Research produces information about the means by which quality can be managed. The results of the project can be used concretely in the planning of the production of the pig. For fish farmers and the feed industry, the research provides accurate information on how the fatty acid composition of slaughter fish can be adjusted and what its effects are on the quality of the final product and the economy of the operation. The consumer perspective is to preserve the healthiness of whitefish products in a changing operating environment.
