The BioDepura project's main objectives are: i) to improve the biochemical composition of bivalve molluscs produced in aquaculture, after purification; ii) improve the organoleptic characteristics of purified bivalves; iii) reduce mortality during the purification process; and iv) increase the shelf life of purified bivalves. Four species with commercial value will be studied: boa clam (Ruditapes decussatus), razor clam (Solen marginatus), oyster (Crassostrea gigas), and cockle (Cerastoderma edule), and methodologies will be developed for each species.
