It is crucial that the quality of salmon satisfies customers' expectations and specifications. There is no unambiguous definition of ""good quality"", and different product properties are emphasized differently, depending on the market and application. The various quality parameters are of greater or lesser importance for the Norwegian salmon industry. Views on which quality characteristics and quality errors are most important may vary with where in the value chain one is. In order to increase value creation in this industry, it is important to identify what constitute the biggest quality challenges, where any quality errors occur and how to avoid these quality errors in the future. Another aspect that comes up is the need for product differentiation based on key quality characteristics. Goal: To map, from the industry's point of view: 1. what constitute the biggest quality challenges for the Norwegian salmon industry and where in the value chain they both arise and may have their cause 2. which quality parameters can be emphasized to differentiate the products.
