The effect of various raw materials included in the fish diet on the end product flavour were evaluated. Various raw materials were subjected to techno-economic research based on their availability, price and potential impact on flavour, as well as on their potential relation to the natural diet of the fish species. Some of them were chosen based on the previous analysis. The flavour of the potential raw materials was evaluated based on volatile compound analysis. Sea bass diets were formulated and fish were reared. The end product reared fish was analysed for the volatile compounds in order to investigate potential correlation of fish flavour with the fish diet. Goal: to evaluate the effect of dietary raw materials in fish quality and in particular in the flavour volatile compounds of the fillet.
