The project addresses two main issues: 1) "the effect of early or late opening of the neck on stockfish" and 2) "increased durability of diluted stockfish for the domestic market". In this project, one will first gather existing literature, information and experiences about the durability of diluted stockfish. Conservation and MAP experiments will then be carried out to try to extend the shelf life of cold storage for the diluted product.
