The Quality Regulations for fish and fish products (FOR 1996-06-14 no. 667) prohibit freezing of round (unbleached, ungutted) saithe to be used for human consumption. This project compares the quality of saithe frozen round and saithe that is frozen after gutting, and was carried out on behalf of the Fisheries and Aquaculture Industry's service office - Bacalao Forum, and follows up previously completed initial trials, financed by Fonn Egersund AS.
