FHF's Expert Group for Whitefish has a goal that wild-caught fish should be cooled down to 0°C (or lower) as soon as possible after capture, and that the temperature is maintained until the customer. The expert group wants to carry out a project that analyzes the current cold chain from catch to market for some selected fleet groups as well as for the production and transport of fresh fillets. The project describes the current situation in the fleet, industry and transport chain to the customer. Goals: • To perform an analysis of the current cold chain from catch to market and through subsequent production and transport of fresh fillets. The analysis is performed for a few selected fleet groups, and through the project the current situation in the fleet, industry and transport chain to the customer is described. • To describe what must be done to achieve the industry's objective based on current processes and technology, based on the opportunities that new production processes and new technology can provide.
