Today, residual raw material from the sea-going fishing fleet that has on-board production is mainly used for feed. The project wants to contribute to a larger share of the residual raw material being able to go to human consumption as high-quality canned products. This is anchored in Ervi kfisk's strategy, and the company already has ongoing projects together with Sintef Bedriftsutvikling. MS Frøyanes is the first Norwegian liner to have invested in a production line for canned food on board. Line-caught fish provides a particularly good quality of the residual raw material due to gentle handling. Experimental work will be carried out with sorting, pre-treatment and canning of raw materials from liver, roe and milk to produce products from ultra-fresh raw materials. In this work, Møreforsking and Matis will use their expertise in residual raw material quality and product development. Customer and needs mapping will be carried out in the focus markets. Finished goods assessment shall take place in collaboration with the customers. In the marketing work, the products will be launched in a market with high payment capacity. The feedback from the market testing shall contribute to the adjustment of production in relation to the customers' requirements. The goal is to reach the retail segment with high-quality products produced from ultra-fresh raw materials. Work will be done on markets in Eastern Europe and the UK.
