The market of catering sector is diverse and rapidly developing in Finland. Restaurants are the best paying customers for high-quality fresh fish. The fisheries sector needs more information from catering sector, so the entrepreneurs can market more efficiently. The data concerning the use of fish is collected by telephone interviews. The stratified sample of 2 000 selected catering units were interviewed. Catering units are. Statistics Finland carried out a telephone survey and a statistical analysis were carried out by Finnish Game and Fisheries Research Institute (FRFGI) and the University of Jyväskylä . Information on use of fish for the year 2005 was published in the Finnish Game and Fisheries Research Institute of Fish and Game Reports series. In addition, the results were disseminated widely. Articles, publications and presentations were presented to national and international audience. The main objective is to estimate the use of fish and crayfish in the catering sector in Finland - the total volume - The volume by product - By major catering segments.
