Nofima has prepared a project description where the goal is to develop a common tool for both supervisory authorities and industry for use in quality assessment of fish. In phase 1, this project will use three different approaches to seek and obtain a tool that can be used to evaluate fish quality based on consumers' perceptions: Sensory methods; Microbiology; Spectroscopy. In a phase 2, consumer surveys will be conducted where the methods from phase 1 are correlated with whether consumers accept the products or not.
