The background for the project is the significant challenges of producing shelf-stable protein products from off-cuts from herring and mackerel. In the first place, there are challenges linked to avoiding oxidation of residual fat in fish powder, in order to satisfy product requirements from customers in the feed and food industry. The issues addressed have broad relevance for actors within the marine ingredients industry, aimed at markets for foodstuffs, feed for aquaculture and other food production, as well as feed for pets. Main objective: To find the most suitable drying technology for the production of storage-stable protein powders. Sub-goals: 1. To select the best drying technologies, via literature and pilot studies. 2. To find optimal process conditions for desired product properties, with reduced production costs and a minimal CO 2 footprint. 3. To optimize the use of antioxidants in processing and storage. 4. To implement advanced analyzes of oxidation parameters. 5. To develop design and dimensioning criteria, as a basis for investments.
