The aim is to strengthen the competitiveness of Icelandic cod by increasing quality and value of salted products. That will be done be improving and optimising handling of raw material and of curing processes. Available information about effects of origin of raw material (fishing grounds and catching methods) on yield and quality of salted products will be analysed. The effects of different cooling methods applied after catch with regard to salted products will be evaluated. The functionality of added fish proteins during salting and curing will be tested. Comparison of different curing methods will be carried out in order to minimize loss of dry material during salting and maximize quality and yield.
