Industry guidelines have been issued for fresh and frozen salmon to be exported to Russia. This points to some specific hygiene requirements that will ensure that salmon products are safe food for consumption. The overall goal of the document is to protect consumer health and ensure fair trade. The guidelines describe some specific criteria that will help reduce the risk that can be associated with the consumption of salmon and trout. The guidelines are limited to the production of gutted salmon and trout and cover the process from receiving live fish, to delivering fresh or frozen product to the recipient for further distribution. Goal: to prepare guidelines for hygienic practice at Norwegian salmon slaughterhouses that will set standards for the implementation of measures for approval, especially for the Russian market.
