Players in the industry claim that the quality of whitefish raw material is developing negatively. However, it is not well documented how landings of whitefish are actually distributed along a "quality scale" from flawless raw material that can be used for all applications, to poor raw material that has few uses. The project will estimate how the quality of fresh raw material of cod and haddock is actually distributed between defined quality classes and what economic consequences this has for the industry. Definition of quality classes is made on the basis of the flexibility one has with regard to applications. Documentation is based both on previous data and on new data that is registered in the project. The new registrations cover all relevant tools, but with particular emphasis on forms of operation where the data base is weak from before. Goals: To register catch damage and quality defects in cod and haddock when delivered from fisherman to buyer, for all relevant gear, through an annual cycle. The Catch-Damage Index (Nofima 2013) is used as a registration tool, but a simpler control form will also be developed and tested for use in companies' reception control, and / or in quality control performed by the supervisory authority. Sub-goals • To establish criteria for grouping fresh raw material of cod and haddock into “quality classes” based on application possibilities (from “flawless” raw material to “poor” quality). • To establish a database of quality records that can be used to estimate how the raw material of cod and haddock is distributed between the defined quality classes and how this develops over time. • To estimate financial consequences in defined “model companies” based on the quality classification of the raw material, when the quality classes are differently distributed in relevant “raw material purchases”.
