"In the production of salmon, softness in the fish meat has been proven to be a growing problem. Most of the companies have reported that there have been quality problems associated with soft fillets. Several of the customers of salmon have reported problems in connection with filleting, a lot of wastage due to reindeer cutting and widespread fission that has resulted in poor quality of smoked salmon. So far it has been investigated possible causes of this problem that can not be linked to a particular region or individual cause. The problem is so complex that it is necessary to carry out a certain mapping before one is able to take one decision. Initially, a workshop was planned to start, but this will be postponed pending that a preliminary project has investigated some of the reasons why soft fish occur. Texture in farmed salmon was conducted as a literature study and provides an overview of methods for measuring texture and connection with genetics, growth, feed, health, slaughter more. The report provides a good overview of topics and will be useful as a starting point for further research."
