Summary The industry has had problems with mackerel caught in June with soft texture of the fillets. This may be due to high food availability during this period, and the project aims to evaluate if keeping the fish in a purse seine, for gut evacuation and starvation, will improve the texture. The fish were kept in the purse seine for an extended period of time in order to study the effects of this on quality and fish welfare. Purse seine storage of the fish and sampling was conducted in June 2013 in stage 1 of the project. The filet samples will then be analysed for texture. If the results show clear differences over time, the remaining samples will be analysed for possibly leakage of digestive enzymes from the digestive system, for possibly high concentrations of free amino acids in filets from high food intake as well as other processes that may be related to changes in texture. Goals: (1) Evaluate if long time purse seine storage of mackerel from the summer fishery is possible with acceptable survival; (2) Study the changes in quality of mackerel during purse seine storage up to 40 days; (3) Study changes in texture and structure of summer mackerel stored in purse seine up to 40 days.
