CATCH-2 is an interdisciplinary project where the overall aim is to use live stored cod to create high quality products, including ready-to-eat dried and salted products. By keeping cod alive after capture, the long-standing and substantial challenges associated with variations in supply and quality can be overcome. Very high product quality provides ample opportunity for gaining higher prices for traditional salted and dried cod products as well as for high value added consumer packs in up-market segments both nationally and internationally. CATCH-2 focuses on a series of innovations along the value chain from catch to consumer which are required to exploit this potential. Thus, the project combines research on new technology, processing, packaging, shelf-life and consumer insight in order to create a knowledge platform for the development of dried and salted cod products with very high quality and value-adding and a differentiated profile in the marketplace.
