Consumption of sea food products comparing to vegetable products, red meat and poultry is fairly low in our country. Conscious, healthy and balanced diet is important in our country where the population growth is fast. Seafood processing industry gained an acceleration in recent years in Turkey. But development of this sector established in west region of our country. When considering the quantity of catching valve. Black Sea is being at the forefront but conversely development of aquatic product processing industry is insufficient. Quick freezing and cold storage are constantly seen outputs in this sector. Smoking, marinating, salting etc. are required processing methods for increasing the diversity and consumption range of seafood in Black Sea Region.
