The aim of the present work is to review possibilities of increasing the value of white-fish skin obtained from the Norwegian fish filleting industry. A great number of possible applications are discussed; including feed and bait production, preparation of leather products from fish skin, the numerous possibilities of fish gelatine application and the possibilities of obtaining valuable health products and bioactive peptides by controlled hydrolysis of fish skin proteins. The conclusion is that fish skin is a very interesting raw material which may be utilized for the production of great many valuable products. However, it is challenging to reveal which products will give the best feasibility in the long run – technologically and economically. Goal: to contribute to increased value creation from fish skins. As the value today is determined by the relatively low price of feed protein, there will be a clear potential for an increase in value if the raw material is further processed and sold to more specialized areas of use.
